Setting up

Assembly required; hardware and instructions are included. The castors are optional and bolt on if you want the rack to roll.

Twenty trays, one set of wheels.

The rack every bakery, pizzeria and catering kitchen ends up with three of, because trays have to go somewhere while they cool.

A bun pan rack is where bread proves, pastry cools, pizza bases wait and a catering job stacks up before it goes out the door. This one takes twenty full-size sheet pans, or forty half-size, on runners spaced for air to move between them. The whole thing is aluminium, so it weighs under 14 kg empty and never rusts, and the rack is rated to 240 kg loaded.

It rolls on four castors, two with brakes, so a full rack moves from the oven to the cooling corner to the van and stays put when you lock it. The edges are polished and rounded to protect your hands.

Goes with.

What this usually leaves the warehouse with.

Close view of a rounded aluminium runner with a tray of croissants

Aluminium for a reason.

Aluminium resists rust and conducts heat, so a tray of rolls straight from the oven cools evenly instead of sweating on the bottom. At under 14 kg the empty rack lifts into a van by one person, and loaded to its 240 kg rating it still rolls on the castors.

  • Aluminium alloy, no rust
  • 13.7 kg empty, 240 kg rated
  • Runners spaced for air between trays

Rolls, then stops.

Four swivelling castors, two of them with a foot brake. Push it to the oven, load twenty trays, push it to the cooling corner and lock it. The braked pair goes at whichever end you tend to stand. Wheel mounting is optional; if the rack is going to live in one place, leave the castors off.

  • Four swivel castors, two with brakes
  • Castors optional
  • Full height still fits a standard doorway

Every kitchen with an oven.

Bakeries prove dough on it under a cover. Pizzerias stack bases and boxed pies. Caterers build a job on it tray by tray and wheel the whole order to the van. Cafes use one as cooling and storage in the same footprint, 660 mm by 517 mm, about the size of a domestic oven door.

  • Caterers loading jobs by the tray
  • Cafes short on bench space

What it will carry.

Ratings are for trays spread across the tiers. The per-tier figure is the limit for any single runner pair.

Questions we get asked

Which trays fit?

Full-size sheet pans, about 660 × 457 mm, one per tier, or half-size pans, about 457 × 330 mm, two per tier side by side. Standard gastronorm trays with a rim also slide on the runners.

How far apart are the runners?

Twenty tiers over the height of the rack. If you need more height for a tall loaf, skip a tier.

Do I have to fit the castors?

No. They bolt on if you want the rack to roll and stay in the box if you do not. Most kitchens fit them; a rack that moves to the oven and back is the point.

Will it go through a doorway and into a van?

It is 660 mm wide and 1767 mm tall, so it rolls through a standard 820 mm door upright. For a van, tip it and load it flat; empty, it is under 14 kg.

Can I cover it for proving?

Yes. A rack cover with a zip front turns it into a proving cabinet at room temperature and keeps flies off trays waiting to cool. Any cover made for a full-height 20 tier rack fits.
