The blade is 250 mm of carbon steel, which is the size that clears a full ham or a rolled roast without a second pass. A 240 W motor spins it between 300 and 450 rpm, fast enough to shave, slow enough not to tear. The food sits on a tilted carriage that slides along a rail past the blade, and a thickness dial from zero to 12 mm sets how much of it meets the edge on each pass.

The thickness knob moves the gauge plate in front of the blade. At zero the plate sits flush and the blade shaves. At 12 mm it steps back the width of a finger for steak, schnitzel and thick-cut bacon. Everything in between is a number you can write on a card and set again tomorrow, which is how a café gets the same sandwich every day.

A sharpening stone is built into the machine, so the blade is kept keen without anything coming off it. A blunt slicer tears cold meat and squashes bread; a sharp one goes through frozen meat, ham, carrots and potatoes cleanly, which is what the maker rates it for.

The food pusher has a rake of pins that grips the meat so your fingers do not have to. A clear guard covers the blade above the carriage, the carriage handle has a guard ring, and the on and off switch is sealed against water. The body is aluminium alloy, and the maker says to wipe it clean with a cloth after use. Rubber feet keep it on the bench.

The 250 mm blade suits a café, deli counter or home kitchen. The 300 mm version has a larger motor and clears bigger primals; buy it if you slice whole rounds of beef or large cheeses.

Partly frozen, yes, and that is the easiest way to get very thin, even slices of beef or chicken. Let a solid frozen block soften before you slice it.
The sharpening stone is built in. Use it as the manual shows, with the carriage clear, then wipe the blade. Sharpen whenever slices start to tear rather than cut.
Yes. Day-old bread slices cleanly; fresh bread is better on a thicker setting. Hard cheeses slice well, soft cheeses are better chilled first. The gauge plate and carriage wipe down between foods.
Unplug it, set the dial to zero so the gauge plate covers the edge, and wipe the blade, gauge plate, carriage and pusher with a food-safe sanitiser. The maker says to wipe it clean with a cloth; never put the body under water.
Only if you slice large primals or whole wheels of cheese. For a café, deli counter, sandwich bar or home use, the 250 mm blade clears a full ham and is easier to lift, clean and store.
